| Zucchini Relish |
How many things can you do with zucchini? A lot, but it never seems like enough if your zucchini plants are flourishing. This zucchini relish recipe is great for hamburgers, hot dogs, tuna salad or any time you need a little sweet relish to complete a dish.
Zucchini Relish
4 C Chopped Onions
10 C Grated Zucchini
2 Chopped Green Peppers
2 Chopped Red Peppers
3 Tbsp Salt
2 1/2 C Vinegar
3 1/2 C Sugar
1 tsp each of Nutmeg, Turmeric, Celery Seed,
1 Tbsp Cornstarch
Grind together vegetables and place in a large container.
Add 3 Tbsp table salt and soak overnight.
Drain and rinse well to remove salt brine. Squeeze out excess moisture.
Cook vinegar, sugar, spices, and cornstarch. Bring to a boil. Add vegetables and simmer 30 minutes.
Cold pack into pint or jelly jars for 10-15 minutes. Makes 8 pints.
