Quick and easy chicken tortilla soup

 Quick and Easy Chicken Tortilla (Taco) Soup


Yes, I've posted this recipe before, but it's been a while and this version has a few more tips and photos to help you out!


Quick and easy chicken tortilla soup

Everyone needs a go-to recipe for busy days. This soup comes together quickly with items from your pantry. Perfect for a hectic evening or when you want to warm up quickly. The chicken can be substituted with seasoned ground beef for a different twist, but keep in mind it will take a little longer to prepare. 

1 -2 Quarts Stewed Tomatoes

½ Onion Diced

1 tsp Minced Garlic

1 Pkg. or 2 Tbsp Taco Seasoning

Chicken Broth if desired

1 can each of Black Beans, White Northern Beans, and Red Kidney Beans
1 - 1 1/2 Cups Corn (I prefer frozen to canned)

1-2 Cans Chicken Breast Meat

Salt & Pepper to taste


Grated Cheese, Sour Cream, Avocado slices, Salsa and Tortilla Chips or Strips for garnish.


Combine tomatoes, onion, garlic, taco seasoning and chicken broth and bring to a boil. Cook until onions are tender. Add remaining ingredients and heat through. Garnish as desired.


To make tortilla strips, cut corn tortillas in ¼ - ⅓ inch thick slices and cook in hot oil. Drain on a paper towel and sprinkle with salt.

This recipe is easy to adjust depending on your tastes. For a thinner soup, use more tomatoes or add chicken broth to achieve desired consistency. I like a variety of colors and textures, but feel free to omit or add any beans or vegetables you wish. Ground beef cooked and seasoned for tacos or leftover roasted chicken can be used in place of canned chicken. Be adventurous and experiment until you find the right combination for your household.

Fry tortilla strips until crispy!

Fast and Easy Cheese Soup



I thought it was about time to post something savory on Food Friday. This cheese soup recipe is quick, easy, and yummy on a cold winter evening! Serve it up in a bread bowl or with this sourdough focaccia bread. Mm-mmm Good!

Quick and Easy Cheese Soup

  • 2 C water or chicken broth

  • ½ C chopped carrots

  • ½ C chopped celery

  • ¼ C chopped onion

  • Salt & Pepper to taste

  • 2 C mashed potatoes (It’s okay to use instant potato flakes if you don’t have leftover spuds on hand.)

  • ¼ C butter

  • ¼ C flour

  • Dash of salt

  • 2 C milk

  • 2 C shredded cheddar cheese (cubed Velveeta works well, too.)

Simmer vegetables in water or broth with salt and pepper for 20 minutes.

Meanwhile – Prepare a white sauce. Melt butter in large saucepan. Stir in flour and salt and cook until smooth.  Slowly add milk and cook until thickened, stirring often.  Add grated cheese to white sauce and stir until smooth.

Combine mashed potatoes with tender vegetables.  Stir cheese sauce into the vegetables.

Your soup is ready to serve!

Variations – Add chopped ham, steamed broccoli, frozen peas, or grated parmesan for a little sharpness. Garnish with salsa for a southwestern flavor!

Food Friday: Chicken Tortilla Soup



Readers asked for something healthy, easy, crock pot friendly, and warm.  Naturally, I thought of this recipe for Chicken Tortilla Soup.  It can be ready in minutes on the stove top or warm for hours in the crock pot.  It has lots of fiber, vegetables, lean meat, a pop of flavor and it's colorful!

Chicken Tortilla Soup 

1-2 quarts of stewed tomatoes (I use my own bottled tomatoes) 
1/2 cup diced onion
1 can each of black beans, white northern beans, and red kidney beans
1 - 1 1/2 cups corn (I prefer frozen to canned)
1 - 2 cans of chicken breast (I use my own canned chicken.  More on this in another post!)
Taco seasoning to taste

Bring stewed tomatoes and onion to boil. Drain beans. Add beans, corn, chicken breast and its broth, and taco seasoning. Return to boil. It's that easy! 

If you are using a crock pot simply dump all the ingredients in the crock and let it simmer.

Garnish with your choice of the following:

Avocado slices
Grated cheese
Sour cream
Salsa
Tortilla chips or tortilla strips
(Too many of these can make it not-so-healthy!)
